Happy Food – Balsamic Salmon Salad

I was making a simple dressing for one of my favorite recipes, Balsamic Salmon Salad.

I had mixed the olive oil and vinaigrette together and let it sit, while I waited for the salmon to finish baking.

Apparently, Mr. Olive Oil and Miss Balsamic Vinaigrette were happy to be together because this is what I found in the bowl right before I was about to toss the salad greens in.

As if having one of my favorite meals didn’t make me giddy already!

Something as simple as salad dressing shaping itself into a smiley face sent me sky rocketing into giddy-land!

I’m pretty sure I’ve got the same big silly grin slapped on my face as well.


The recipe is from one of my favorite cookbooks, “Eating for Life” by Bill Phillips. The recipes are healthy, simple, fast and most importantly, delicious!

Yes, favorite recipes are tagged for easy access. Obviously not by me… since my organizational skills would have meant 5,000 Post-It notes of all different sizes, shapes and colors sticking out at every angle from the book.

The Balsamic Salmon Salad is one of my favorite recipes. It’s easy to whip up in no time, and it’s a well rounded, tasty meal.

As you can see, the ingredients are common and mostly likely already sitting in your pantry or cupboard waiting to be used.

I made a few adjustments to mine, substituting ‘bottled’ basil and oregano for the fresh. It’s difficult to find fresh basil and oregano around here without making the trek down to Whole Foods (though I really should take advantage of any excuse I get to go there).

Also, instead of putting the salmon on top of the salad, I put it on the plate next to the salad. The hot salmon out of the oven heats up the greens and makes them soggy.

Once in awhile, when I’m feeling adventurous, I toss some parmesan cheese in with the potatoes to give it a little more zest.
